Happy Holidays, Hoes!!
I cook mine in a crock-pot; today, oven space is at a premium and I am baking cookies. I'm making a nice pot roast with carrots, onions and yukon gold potatoes. I sear my roast in a cast iron pan, but I melt bacon grease in it first, while I coat the roast in sea salt and coarse ground pepper. After I sear a nice crust on it I pop it in the crock-pot and dump veggies on top of it, add 1 1/2 cups of water and a couple of bay leaves and put it on low for 8 or so ours. I'll try and remember to post a photo, but it's not going t be as pretty as if I had put it in the oven...

Just off the smoker 3.5 hrs on 300, with a 375 warm up temp. You open the smoker , temp drops an easy 15 - 25* Lets see how it looks inside once it sits 1/2hr. Removed @ 130*
