Doesn't really have a true beer taste but Angry Orchard Ale or other like it are a good gluten free alternative!
Bourbon is still made out of grains. Your best bet is potato vodka or wines. Gluten free beers are something you can get used too but are never as good as the real thing. Good luck finding what you can eat, i have a few friends that have celiac's and they had problems at first but soon figured out what would work for them.
Gluten is in wheat, and through cross-contamination a lot of oats as well. If you buy oatmeal, make sure it's labeled gluten free.
Other than that, it's relatively easy to avoid these days. Rice/potatos/corn/quinoa are all fine for starches. Use soft corn tortillas at chipotle.
In general just read the labels.

Bourbon is distilled. How do you figure that any gluten from gluten producing grains added to the corn would make it through distillation?
