"Any idea what the total transfer cost would be for the two places to handle them?"

I want to say its 15% total and the shops were splitting it. Been a while and of course no telling what the markup with your new background system.

"Does NM still have a ban in carry in any place that serves alcohol?"

If the establishment makes more than 50% of its sales from alcohol then its a no-no. Less than 50 you're good to go. (also no go on any establishment that post no ccw) I can't think of anyplace in this part of the state with one of those signs though. At least no place I go to.
