    In this same general idea anyone recommend a good sharpening kit for high end kitchen knives? There are so many options out there
    You sir, are a specialist in the art of discovering a welcoming outcome of a particular situation....not a mechanic.

    I use a sharpening steel on all my kitchen knives before using. This seems to keep them sharp and I avoid having to bring a knife back from being dull.

    Any of the angle guided sharpeners should you do fine. Lanksy (with diamond stones and sapphire stone), edge pro, wicked edge. On the single sided systems work up a burr, then switch sides. With the lanksy diamond stones I only use oil on the sapphire stone. A kitchen knife will probably be a 15 or 20 degree edge.
